NFL Conference Championship Chicken Nachos!



Hey everyone. How have you all been? I don't know if I've been missed, but I've certainly missed all of your great food blogs. Let me first start off by saying that I'm sorry for being offline for so long. I've just been really busy with personal stuff and I guess I haven't posted since Thanksgiving! During the brief break I did have a nice Christmas, a Happy New Year, and even celebrated another birthday. But I'm back and ready to post some more blogs about food. Yes, I've still been eating since I last posted. ;)

Anyway, today are the NFL Conference championship games, and what better way to enjoy watching them than with some chicken nachos (I love 'chos!). No, I didn't make these. My sister invited me over to watch the games with her family and she is the one who prepared everything (she's a really good cook). I'm actually here right now watching the games at her house and typing this up on my laptop. Anyway, it was all delicious.

She prepared everything by hand and even made her very own homemade salsa with tomatoes, cilantro, onion, and other good stuff. The grilled veggies and the marinated chicken were the best. I think she used a Mexican seasoning for the chicken. The Spanish rice was also delicious, as she used real garlic in it. Enjoy the pics!
